Vegan Kale Caesar Salad

Ingredients
  

  • For Salad
  • 6 cups kale leaves
  • 1 unit lemon zest
  • 4 green onions thinly sliced
  • 1 cup red cabbage shredded
  • 2 carrots grated
  • 1/3-1/4 cup caesar salad dressing
  • 2 tbsp hemp or pumpkin seeds
  • For Dressing
  • 1 cup organic veganaise
  • 2 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 1 tbsp vegan Worcestershire sauce
  • 1 tsp black pepper
  • 1 tsp dijon mustard
  • 1 tbsp garlic chopped
  • 1 tsp ground pepper
  • 1/3 cup nutritional yeast
  • Salt to taste

Method
 

  1. Combine all ingredients – adjust consistency with liquids.
  2. Taste for seasoning.
  3. Combine kale, green onions, lemon zest, cabbage, carrots with dressing in a large bowl.
  4. Divide into 4 portions.
  5. Garnish with pumpkin or hemp seeds.
