Tabbouleh-Style Cauliflower Rice

Servings: 4 servings

Ingredients
  

  • 1 medium head cauliflower rice Visit
  • 3 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp dried oregano
  • 1 tsp chopped garlic
  • 1 cup chopped parsley leaves
  • 1/2 cup chopped mint leaves
  • 1 pint cherry tomatoes
  • 3 green onions thinly chopped
  • 1 tsp black pepper
  • Optional add-ins
  • 1/4 each thinly sliced red onion
  • 1 can garbanzo beans
  • 1/4 tsp chili flakes
  • 1 cup spinach leaves

Method
 

  1. In a large bowl, whisk together dressing ingredients.
  2. Add the cherry tomatoes, watermelon, and spinach and lightly coat with the vinaigrette.
  3. Toss in the mint, basil, salt, and pepper.
  4. Just before serving, sprinkle the feta cheese on top.
